I do: where did the sugar go?

Watch closely: I'll stir sugar into warm water. The sugar seems to vanish… but has it really gone?

Common wrong idea

"The sugar disappeared" or "it turned into water."

What really happens

The sugar dissolved — it broke into pieces too small to see, spread evenly through the water, and is still there.

Proof it's still there: the water now tastes sweet, and if we let the water evaporate, the sugar is left behind. That's how sea salt is harvested — seawater evaporates and the salt remains. Dissolving is reversible.
